Nut and Dried Fruit Cookies
Whether you want a sweet treat after a successful workout or just crave a healthy snack at home, this recipe is the answer to your needs.

Ingredients:

  • 1 cup of mixed nuts (e.g., almonds, walnuts, cashews), chopped

  • 1 cup of mixed dried fruits (e.g., raisins, cranberries, apricots), chopped

  • 1 cup of rolled oats

  • 1/2 cup of whole wheat flour

  • 1/2 cup of honey or maple syrup

  • 1/4 cup of coconut oil, melted

  • 1 tsp of vanilla extract

  • 1/2 tsp of baking powder

  • A pinch of salt

Instructions:

  1. Preheat the Oven: Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

  2. Combine Dry Ingredients: In a large bowl, mix the chopped nuts, dried fruits, rolled oats, whole wheat flour, baking powder, and salt.

  3. Mix Wet Ingredients: In another bowl, whisk together the honey or maple syrup, melted coconut oil, and vanilla extract until well combined.

  4. Form the Dough: Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

  5. Shape the Cookies: Using your hands or a spoon, form the dough into small balls and place them on the prepared baking sheet. Flatten them slightly with the back of a spoon.

  6. Bake: Bake for 12-15 minutes or until the edges are lightly browned. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
